Mole Sauce

Mole is the generic name for a number of sauces originally used in Mexican cuisine, as well as for dishes based on these sauces.

1 pound of mulato chile, seeded and deveined

12 oz pasilla chile, seeded and deveined

10 ancho chiles, seeded and deveined

5 chipotle chiles, seeded and deveined

3 cum chiles, seeded and deveined

1/2 pound of almonds

1/2 pound of raisins

1 tablespoon anise seeds

1 tablespoon dried coriander

1/2 tablespoon whole allspice

3 cloves

1 cinnamon stick

3 slices of bread.

1 tortilla

5 tablets of chocolate table

1/2 cup sugar

1 head of garlic

3 tomatoes


Heat the butter in a large skillet or saucepan over medium-high heat.

Fry all the chilies being careful not to burn.

The chipotle must burn slightly to prevent the mole out very spicy. Remove from heat and place in a large bowl.

Make the same pan almonds and dóralas evenly, taking care not to burn. Transfer them to the bowl of chilli. Follow the same procedure with raisins, then anise, coriander, pepper, cloves and cinnamon stick.

In the same pan fry the slices of bread, tortilla and then finally the chocolate room. Spend the ingredients to the bowl of chilli as you go pulling the pan.

Fry the chopped tomatoes in another pan with little butter.

Once ready, pass them to the bowl with the other fried ingredients.

Peel the garlic head and handle teeth on a griddle over medium heat until they turn brown, about 5 minutes.

Added to the bowl with the remaining ingredients.

Toast the sugar in a clean skillet over medium-low heat, taking care not dissolved, and place into the bowl with the remaining ingredients.

Grind all ingredients gradually into a food processor.

Mix well to form a smooth paste.

Add Salt and Pepper

Serve with Grill chicken and Rice & Beans
