Mole is the generic name for a number of sauces originally used in Mexican cuisine, as well as for dishes based on these sauces.

Make the same pan almonds and dóralas evenly, taking care not to burn. Transfer them to the bowl of chilli. Follow the same procedure with raisins, then anise, coriander, pepper, cloves and cinnamon stick.
