Ramen is all about investing time to make an incredibly steamy broth, using cheaper cuts of meat and bones for maximum flavour.
This is a lovely gentle introduction to bolder flavours – my kids absolutely love it. And if you’re just making it for grown-ups, feel free to use mirin or sweet sherry instead of the lime juice.
With toasted peanuts, lovely fried tofu, Asian greens and a chilli kick, this quick stir-fry supper is delicious!
